Black Bean and Chorizo Chili
serves 4
Ingredients
- 2 chipotle chiles in adobo sauce, fine chop
- 1 1/2 C onion, chopped
- 5 cl garlic, minced
- 6 oz chorizo sausage, diced
- 1 1/1 T chili powder
- 1 T cumin
- 1 T lime juice
- 1 1/2 t oregano
- 1/8 t cinnamon
- 3 cns black beans, drained
- 3 cns whole peeled tomatoes, chopped, with juice
- 1 cn corn kernels
- 1 1/2 oz semisweet chocolate, chopped
- sour cream
- cheddar cheese, grated
Instructions
- Sauté the chiles, onion, garlic and chorizo until tender. Add chili powder, cumin, lime juice, oregano, cinnamon, beans, tomatoes, and corn and simmer 30 minutes.
- Remove from heat, add chocolate, season to taste, and serve with sour cream and cheese.
- Plate, garnish with sour cream and cilantro, and serve.
